Cheesy Tuna Skillet Pasta

I really love skillet meals like this Cheesy Tuna Pasta.  Meals/entrees that can be cooked all in one pan on top of the stove.  In the summer they are especially welcome as they don't heat up the kitchen like oven bakes do.   This Cheesy Tuna Pasta is just like your favourite Tuna Casserole, except it is cooked in a skillet.  Amazingly there is no need to cook the pasta first.  It cooks right in the pan with everything else, which also helps to cut down on the washing up!   So what do you need to cook a fantastic meal like this?  Nothing unsual.  Its simple, economical, quick and easy to make. small pasta shapes (I used smaller size macaroni) Albacore white tuna (I only ever buy albacore) whole milk (homogenised, don't use a lower fat milk, the richeness of the sauce comes from the use of whole milk) water butter dry mustard powder sweet paprika (the opposite of hot paprika) greated strong cheddar cheese (don't be tempted to use pre-grated ...

Skillet Sausage, Peas & Rice

I love to cook, and I love to eat.  I worked as a Personal Chef for a number of years for a very wealthy American Family here in the UK, where every meal had to be a production.  I didn't mind.  It gave me the opportunity to stretch, and it was what I was being paid to do.  It was the dream job in many ways for the consummate foodie.   To be honest however, it is not how I like to eat and cook in my personal life.  With the exception of Special Occasions, I want to cook  . . . and I enjoy . . . simplicity.  Less is more in my kitchen.    I prefer simple ingredients, put together quickly, easily and in a delicious way. You can call me lazy if you want to, but it truly is what works best for me.  I don't want to spend hours and hours in the kitchen cooking . . .  or cleaning up!    For most of my every day cooking meals like this Skillet Sausage, Peas & Rice work well for me.  Its the type of thing I lik...

Garlic Steak Bites & Potatoes

This recipe is one that I found and pinned from this site a long time ago.  I finally got around to making it for our Sunday dinner yesterday and it was every bit as delicious as it looked.    I never used to have time to cook a big meal on Sundays because that was the day I always called my mum. I really miss those Sunday phone calls (as you can imagine), so it was nice to be busy and cooking so I didn't have time to sit and think.  Todd didn't mind.  He likes a nice meat and potatoes kind of meal.   I have to admit I am a huge fan of steak and potatoes also.  Especially when they are as delicious and as quick to throw together and cook as this one was.    The original recipe called for flank steak cut against the grain.  Flank can be rather hard to find over here, so I used rump steaks, which worked beautifully.    I also used the last of the garden potatoes.  They were starting to just show signs of sprouting, s...

Sheet Pan Sausage & Peppers

As you know I am doing a diet plan this week on trial, so Todd and I are not eating the same thing.  I have discovered how dangerous it is however, to look at even photos of tasty food when you are not eating regular food.  Its tortuous!  But one does what one has to do!    Sheet pan suppers.  I love sheet pan suppers.  Everything all on one or two baking sheets, baked at the same time in the oven.   Easy peasy and if you line the baking sheets with foil, no clean up either.  You can't lose!   Myself, I adore roasted vegetables of any kind.  Roasting helps to enhance the natural sweetness of any vegetable  . . . I simply love the caramelised edges and almost-stickiness that happens.   You could of course serve this in  crusty hoagie buns with some honey mustard or something similar, and that would be fabulous!   For Todd I opted to serve it with a baked jacket potato . . .  broken open with a knob of ...
