Carrot Cake Drop Scones

I am a real scone lover.  Who doesn't love scones!  People have a tendency to think that they are the same thing as baking powder biscuits, but they couldn't be further from the truth! They are not at all the same thing.    Baking Powder Biscuits are light as air, fluffy and flaky, or at least they should be. If your biscuits are like rocks, I hate to tell you but you're doing something wrong!  They are also on the more savoury side.    Scones are sweeter and denser, and much crumblier than biscuits . . . Biscuits tend to use shortening, although some modern versions use butter.  Scones always use butter.  The fat in biscuits is cut in until you have a variety of bits, some the size of small peas. In scones, the flour is "rubbed" in until the mixture resembles fine bread crumbs.   So you can see, they really aren't the same at all. Both are beautifully delicious and wonderful in their own unique ways! The recipe I am sharing with ...

Perfect Scones with Clementine & Cinnamon Butter

There are few things on earth as enjoyable as a nice hot cup of tea and something sweet to enjoy along with it.  Because of my religion I only drink herbal blends. We don't do regular tea or coffee.   There are some really lovely herbal blends available today  . . .  more than there have ever been.  You can buy it loose leafed, or in bags . . .  if I am doing a bag, I like the bio-degradable pyramid bags . . . But really the best thing for the environment really is loose tea if you can get it. There is nothing to dispose of when you are done, except for the spent tea, and that can go on the compost.  From the earth and back to the earth. That's the best way.   Scones are something I really enjoy with a nice hot cup of tea . . .  they are not hard to make and you can spread them with all sorts . . .  butter, clotted cream, jam, etc.  Hot tea . . .  something sweet.  You cannot beat the combination.   People tend...

Chocolate Chip S'More Scones

I think I must have spent my childhood living under a rock because it was not until I became an adult that I ever heard of S'Mores.  Popular at campfires, you toast marshmallows and then sandwich them between two graham crackers along with a square of chocolate.  The heat from the marshmallows melts the chocolates.  Very gooey and very scrumptious.    Twice a year our church (The Church of Jesus Christ) has what is called a General Conference, which is an opportunity for us to gather together and listen to our leaders speak.  I always enjoy Conference weekend.  There are two (two hour) sessions on each the Saturday and the Sunday, and on the Saturday the break in between is usually marked by enjoying some kind of scrumptious snack or treat that marks this day as special.   In Utah that might mean that they go for Ice Cream.  I have heard some of our leaders refer to that on occasion.  Here in the UK, we watch it from our own home....

Three Ingredient Cheese Scones

What if I told you, you could make a delicious, light, flaky savoury scone using only three ingredients?  Its true! You can and these lovely scones are just that!    Light, flaky and savoury scones that use only three ingredients.  Not only that, but they go together in a flash!    You can put these together in about 5 minutes, pop them into the oven, bake and be enjoying them in less than half an hour.  No kidding!    All you need is self raising flour (self-rising), grated cheddar cheese and plain yogurt.  That's it!   You simply stir the cheese and the flour together with a fork, and then stir in the yogurt to make a soft dough.  Pat it out to a rectangle . . .  cut . . .  then bake.   You can easily make your own self raising flour.  Simply add 1 1/2 tsp of baking powder and 1/4 tsp salt  for every 140g/1 cup of plain flour.  Easy peasy!    These rise really nice and tall ...
