Cheesy Tuna Skillet Pasta

I really love skillet meals like this Cheesy Tuna Pasta.  Meals/entrees that can be cooked all in one pan on top of the stove.  In the summer they are especially welcome as they don't heat up the kitchen like oven bakes do.   This Cheesy Tuna Pasta is just like your favourite Tuna Casserole, except it is cooked in a skillet.  Amazingly there is no need to cook the pasta first.  It cooks right in the pan with everything else, which also helps to cut down on the washing up!   So what do you need to cook a fantastic meal like this?  Nothing unsual.  Its simple, economical, quick and easy to make. small pasta shapes (I used smaller size macaroni) Albacore white tuna (I only ever buy albacore) whole milk (homogenised, don't use a lower fat milk, the richeness of the sauce comes from the use of whole milk) water butter dry mustard powder sweet paprika (the opposite of hot paprika) greated strong cheddar cheese (don't be tempted to use pre-grated ...

Butter Roasted Tomato Sauce

When it comes to pasta, its all about the sauce for me.  I could eat a good pasta sauce by the spoonful.  If your sauce is lacking in substance and flavour, your whole dish is lacking as far as I am concerned.    The sauce I am sharing with you today is one of my favourite sauces.  It is totally low maintenance.  It basically cooks itself.  All you need to do is to dump a few ingredients into a baking dish and then let the oven do all the work.  The only work basically that you will need to do is to cook the pasta and for this sauce I recommend something with long strands that the sauce can cling to. Today I used Bucatini.  Bucatini is kind of like macaroni. It has a hole in the centre just like macaroni, but its long like spaghetti.  It goes perfectly with this lush sauce.  I adapted the recipe from one found in Bon Appetit .   Of course when tomatoes are the main focus of a sauce, you want to make sure you use really g...

Saucy Pasta Hoops

I recently got myself a new cookbook.  I know.  I have plenty of cookbooks, but this one appeared to be filled with delicious looking simple recipes.    Half Baked Harvest Super Simple by Tieghan Gerard.  So far  I have not been disappointed.  Every recipe I have tried from the book has been excellent.  I highly recommend.   This is a recipe which really intrigued me. Not only was it pasta, which I love, but it was a rif on those tinned spaghetti hoops that children love . . .  with one exception . . .  it is a more grown up version.   It is also perfectly sized for two, which meant that I got to enjoy some on the day and then enjoy a second feast on it the day after.  I cooked something else completely for Todd. As you know he is not overly fond of pasta, although he does like tinned spaghetti.  Go figure.   The cookbook author used anelli for hers, which are a type of hoop pasta. I didn't have anything l...
