Steamed Sea Trout with a Ginger & Tomato Sauce

I received some lovely Sea Trout Supremes from Seafresh the other day and couldn't wait to try them. So here I am with a delicious fish dish for Friday that I think you are really going to fall in love with! If you aren't already aware of it, Seafresh is an on line fish monger, which sells quality fish, seafood, poultry and meat.  I was incredibly impressed with both their product and their delivery service!  There was absolutely nothing that I could fault with any of it. Feel free to read about my experience here .   These beautiful trout supremes are sourced from the ice cold waters of Scotland and the Faroe Isles in the North of Scotland.  Skinned and boned, and frozen individually, this beautiful fish is a part of the salmon family and contains  health benefits similar to Salmon, being rich in Omega 3 fish oils.  Scotland is famous for its trout and salmon, so I was really excited to be able to try this today.  (Let it be noted tha...

I have had another delicious recipe published on Chef Knives Expert .  This time it is a fabulously tasty Butternut Squash & Goat's Cheese Lasagne Recipe, which makes a delicious use of the fresh Butternut Squash that becoming available to us at this time of year.  I adore butternut squash. It is one of my favourite of the winter squashes.  Sweet and bright, it just lifts everything it touches!    A rich bechamel sauce and  three lush cheeses . . .  nutty Gruyere Cheese,  Salty Parmigino Reggiano, and a soft goats' cheese, are layered with a fabulously delicious butternut squash filling . . .    Pan roasted cubes of butternut squash and onion, mixed with toasted walnuts and a fabulously aromatic and tasty mix of herbs and garlic  . . .   Altogether this is a beautiful supper dish that can be assembled in full a day before you want to serve it and then baked on the day, making it the perfect dish for entertaining. ...

Classic Pot Roast for Two

Cooking for only two people can be somewhat of a challenge for  people.  It took me years to hone the skill. After having cooked for a large family (7 of us) for quite a number of years, it was a struggle for me to teach myself to scale back to only two.   It can be done however and I think I have it down to an art now. Sure there are times when certainly I want to cook for more, but more often than not, that just isn't the case.   If you are only cooking a casserole, that's okay. You can always divide it into two casseroles and freeze one for later on.  But when it comes to cooking a joint, it gets a little bit harder.   I have always found that when cooking a large roast for two people alone, you can't get rid of the leftovers quick enough, and cooked beef never quite tastes the same after having been  frozen, but perhaps that is just me.    There is nothing much more satisfying than a fall-apart tender meaty pot roast to feed the ...

My latest recipe is now live on the Chef Knives Expert site.  This time is is a delicious Apple & Cardamom Custard Tart!   Yes, you heard that correct, two of your favourite desserts . . .  Apple Pie and Vanilla Custard rolled together into one deliciously tantalisingly tasty tart!    It only looks fiddly. In reality it is a very simple make and bake, consisting of a puff pastry base, filled with a lush vanilla and cardamom flavoured custard filling  . . . topped with fresh apple rosettes . . .   and baked until the whole thing is golden brown and just begging you to dig in!   So very impressive.  Be prepared for plenty of oohs and ahhs when you bring this to the table!   Do hop on over to Chef Knives Expert page for the full recipe and step by step photos !   I dare say this tasty tart was worth cutting my thumb and I think you will agree!
