Cheese Quesadillas



Cheese Quesadillas make a fabulous quick and easy snack for all kinds of occasions!  Perhaps you want them as a light lunch, or maybe you are entertaining.  These tasty little bites of cheesiness go down a real treat any time! 



As those of you who have been reading me for a while know, I am the lucky recipient of the gift of a Degustabox each month. Opening each one feels a tiny a bit like Christmas to me. Always a surprise, and always filled with things that pique my interest and desire to try. I have been getting these boxes for a couple of years now and I have to say I have never been disappointed.


This month was the May BBQ and Snacking Box, filled with lots of goodies to enjoy at a BBQ or jus as a snack.  From the moment I saw the Street Taco sized tortillas by Mission, I was inspired to want to use them in a recipe, but first a little bit about the rest of the contents of my box.

It was the Mission Street Taco tortillas that I chose to highlight with a recipe.   No surprise there as we are huge fans of Tex Mex in this house!  We are also huge fans of Quesadillas!


That is for a variety of reasons. One they are quick and easy to make (and to eat)!  Two they are delicious and fun to eat.


Three they are incredibly versatile and can be adapted to whatever fillings you want to fill them wih. Today I just used cheese and spring onion.  These taco sized tortillas were a wonderful size for making snack sized quesadillas!


The Lime and Chili tortillas were quite spicy actually so a plain cheese filling suited them!


Just look at how cheesy they are and how toasty golden brown.  My secret to that crisp, golden moreish surface is to butter the tortillas with softened butter before I toast them in the skillet.


It really does make a delicious difference.  They are crisp and buttery!


Nice and cheesy and perfect for dipping into your favourite Quesadilla dips!  Today we enjoyed them with tomato salsa and sour cream! YUMMY!

Cheese Quesadillas

This is a very simple snack to make for your family. You only need a few ingredients and they go together in a flash.

Ingredients:

For each quesadilla:
  • soft tortillas
  • shredded melting types of cheese (I recommend Jack cheese or a medium cheddar)
  • chopped spring onions
  • softened butter to spread
To serve:
  • sour cream for dipping
  • salsa for dipping
  • guacamole for dipping
  • refried beans for dipping

Instructions:

  1. You can use a large skillet on top of your hob to make these.  Butter one side of each tortilla and grate your cheese.  Chop your spring onions.  Heat your skillet over medium  high heat.  Place one of your tortillas buttered side down in the skillet. Add a quantity of grated cheese. spreading it all the way to the edges of the tortilla, but leaving a dip in the centre. I do this because when it melts the cheese will go naturally towards the centre of the tortilla.  Sprinkle with the chopped spring onion and place another tortilla on top of the cheese/onion mixture, buttered side up.  Toast in the skillet until golden brown on the underside.  Carefully flip over using a flexible spatula and toast on the other side.  Cut into serving sized pieces using a pizza cutter or sharp knife. (Depending on what size tortillas you have used this will vary.  These Taco sized tortillas produced four quesadillas each.) Serve warm with your favourite dips.

  Angel Cake is a completely different cake over here in the UK as compared to what I thought of as an Angel Cake when I was growing up.
