Almost Instant Mayonnaise

  One thing that I like to make from scratch is mayonnaise.  That's why I was dismayed when my immersion blender disappeared!  Once you have made your own mayo from scratch you  will want to make it all the time rather than buy it.  The recipe makes a decent amount, not too much, and I have never had a problem using it all up within a week.  I would not keep it for any longer than that.   It does use a raw egg, but if you are bothered about that you can use pasteurised egg or a coddled egg.  Personally I am not bothered.  I find our eggs are very safe today.  However, if you are worried about that, or you have an elderly person or a very young person in the home do try my method of coddling the egg first, and then just add it and proceed as per the recipe below. Desserts and Bakes Worth Making

  I never got anything new baked to share with you this weekend. The weather has been uber hot here and I just can't bring myself to do much in the way of cooking.  I thought it would be another opportunity to share some of the recipes from my old Oak Cottage Blog that I used to have years ago.  Although the photography is not the best, the recipes are all sound and delicious.  There's a little something here for everyone!   You can't beat a delicious Sticky Marmalade Loaf.  It has a beautiful flavour and texture.  Filled with toasted pecan nuts, with more adorning the top and a final glaze of marmalade, this is one you will want to enjoy with a nice hot cuppa!  We like to spread slices of it with butter when we eat it!   *Sticky Marmalade Tea Loaf* Makes 1 2-lb loaf (serves approx. 12) Printable Recipe I like to use extra chunky marmalade in this delicious tea bread. CoChie from Triano

  I was recently asked if I would like to try the new CoChie Range of products from Triano the Tofutie people.  There was a selection of fruity shakes (Strawberry  and Mango)  and some soft spreads. (Original, Mediterranean Herb and Thai Chili & Lime.)   Triano Brands was established in 1995 and is a non-dairy food manufacturer and distributor.  During this time they have supplied all the major supermarket outlets. In 1997 they won exclusive rights to distribut Tofutti products to Europe, Scandanavia and the Middle East and are at present exporting to over 27 countries.  These CoChie range of products are dairy free, gluten free, and Vegan approved, with coconut being the majority of their ingredients.     At present they product two type of Shakies, Strawberry and Mango. I quite liked both of these.  I did find them a bit on the sweet side, but I haven't been eating anything with sugar in it lately so it could be that....

Sticky BBQ Chicken Thighs

  We're having a heat wave, a tropical heat wave! The temperature's rising, it isn't surprising, she certainly can can-can! (Irving Berlin)   Talk about feast and famine.  We were just complaining a week or so ago that we hadn't really had much of a summer and wham!  It has hit us with a vengeance, and just in time for our children here in England to go on their summer break.  They say tomorrow it could get up to 39*C (about 102*F) which will break all records here in the UK.    Of course with the wicked hot temperatures and high humidity come Thunderstorms, and we had the worst one I have ever seen over here last night about 1 a.m. Todd slept through it.
